What I Eat To Stay Lean & Healthy- Weekday Edition

Hello all you beautiful people. If you’re new here my name is Abbey and I. love. food. Like so much!!!

Before I knew anything about health and fitness, I thought there was only one way to eat “healthy.” Vegetables, chicken, maybe some rice, and that’s about it. I spent one summer in college living off of that every single day for dinner. Sure, I lost weight, but I wasn’t enjoying my food. I think it’s SO important to eat foods that you genuinely love in order to sustain healthy eating for the long haul. If you’re forcing yourself to choke down beets and you hate beets… you’re going to crack quickly.

I also think it’s very important to think about your goals when planning out your daily meals. The meals of people who are trying to lose weight vs. improve the composition of their body vs. gain weight and muscle are going to look different! It’s always good to keep that in mind, as well as thinking about your specific body type, the level of exercise you do, and how much food you truly need to eat.

OK. Let’s get specific on an example of what I eat throughout an entire day! I like to keep my meals on the “cleaner” side throughout the week so that I can enjoy dinners out with my friends on the weekend! No food guilt allowed here friends.

Breakfast

Smoothie, Hard Boiled Egg + Pink Himalayan Salt

I’m not currently using protein powder, so I add the egg for protein. I would be hungry 20 minutes after my smoothie if I didn’t eat the egg with it!

Blueberry Banana Smoothie Recipe:

  • 1/2 cup Frozen Blueberries
  • 1/2 Frozen Banana
  • 1 tsp Maca Powder
  • 2 tbsp Plain Greek Yogurt (Chobani)
  • 3 tbsp Unsweetened Vanilla Coconut Yogurt (So Delicious)
  • Fill the rest of the blender with Unsweetened Vanilla Almond Milk (Califia Farms)

Coffee

I am a caffeine queen. I recently created my own spin on bulletproof coffee and I have been LOVING it.

Black Coffee + 1 tbsp Unrefined Coconut Oil + Splash of Califia Farms Unsweetened Coconut Creamer

Snack 1

I recently started switching up my routine to go to the gym over my lunch hour at work. I like to make sure I have a snack before so I have enough energy to get through my workout and I’m not distracted by stomach growling!

RX Bar. (I switch off flavors. Current favorite is Peanut Butter + Berries!)

Lunch

Green + Grain Bowl

This is essentially a beefed up salad. I have so many different versions of this and love creating new ones. Here’s one I made recently that I have been loving:

  • Spring Mix
  • 1/4 cup Quinoa
  • 1/2 Chicken Breast or Shrimp (cook in Chili Powder, Paprika, Pink Himalayan Salt, Pepper)
  • 1/4 cup Fresh Grapefruit
  • 1/4 Avocado
  • Top With: Chopped Red Onion, Jalapeno Slices, Chopped Pistachios, Fresh Lime Juice
  • Dressing Idea: Jalapeno Lime Vinaigrette

Snack 2

Handful of Raw Almonds + Carrots + Fruit (Berries or Nectarines are my current faves)

Nothing fancy with this one here, but sometimes I just like to go back to the basics for snacks!

Dinner

Taco Salad

  • Romaine + Spring Mix
  • Chicken Breast (cook in Chili Powder, Ancho Chili Powder & Cumin)
  • 1/4 cup Chopped Bell Peppers
  • 1/4 cup Chopped Heirloom Cherry Tomatoes
  • 1/4 Avocado
  • 3 tbsp Chopped Red Onion
  • 1 tbsp Chopped Jalapeno
  • Dressing: 1/4 cup Plain Greek Yogurt, Squeeze Juice from 1 Lime, 1 tsp Garlic Powder, Sriracha to taste (depending on how spicy you like it)
  • Crunchies: Crushed Grain Free Tortilla Chips (Siete is my absolute fave brand)

Dessert

Popcorn + 1-2 Squares of Dark Chocolate

I am also a popcorn queen. And a chocolate queen.

Stovetop Popcorn:

  • Cook in Unrefined Coconut Oil
  • Season with Pink Himalayan Salt
  • That’s it lol
